Quinoa Patty Over Baby Spinach


3/4 cup Cooked Quinoa

1/2 med red bell Pepper, chopped finely

4 tsp. flaxseed

Sea Salt and Ground Black Pepper

1 Lg Egg White

3 Cups of Fresh Baby Spinach

  • combine all ingredients (except spinach) in a medIum bowl and mix well.  Form into 2 balls, press down into a patty shape.  Heat the skillet over medium heat, coated with nonstick cooking spray.  Place patties into skillet and cook for 2 minutes.  Flip the patties and cook another 2 minutes, or until light golden brown.  Add spinach to the skillet, cooking until wilted.  Finally place spinach on a plate, topping with the patties.  ENJOY!!!!
  • Option is to add sliced green onion to the patties, and you can also dice baby spinach to add to the patties.
